Healthy blueberries


I thought I would digress from our regular scheduled programming to talk for a couple of days on blueberries and share some of our favorite recipes! Like pineapple, blueberries have huge health benefits.

The #1 health benefit of blueberries would be LDL cholesterol reduction. Of all the blueberries health benefits, perhaps the most famous is resveratrol. While few know that blueberries are a source of resveratrol, many know the health benefits from the stories and news on red wine. Resveratrol in blueberries helps combat the signs of aging, improve life extension, fight disease, prevent free radical damage and increase cardiovascular function. Scientists at the U.S. Department of Agriculture Human Nutrition Center have found that blueberries rank No. 1 in antioxidant benefits, compared to 40 other fresh fruits and vegetables. Also, at the 2009 Experimental Biology Convention, the University of Michigan scientists discovered that a low-fat, blueberry-enriched diet helped decrease belly fat, total body weight and cholesterol.

On another website I found a study from U of M: Blueberries have been proved to preserve vision: Blueberry extract, high in compounds called anthocyanosides, has been found in clinical studies to slow down visual loss. They can prevent or delay all age related ocular problems like macular degeneration, cataract, myopia and hypermetropia, dryness and infections, particularly those pertaining to retina, due to their anti-oxidant properties.
And a benefit that is near and dear to us: Blue Berries can prove to be bliss for the cancer patients, for they contain certain compounds like Pterostilbene (excellent remedy for colon and liver cancer) and Ellagic Acid which, in harmony with Anthocyanin and other anti oxidants like vitamin-C and copper, can do miracles to prevent and cure cancer.
